Bikini Recipe
Yields 10 people
For the Clementine Cordial (produces 750ml)
300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g fine sugar
For the Cocktail (produces 850ml, serving 10)
400ml premium vodka
100ml London dry gin
150ml peach liqueur
200ml clementine syrup (as made above)
A few cranberries, as a garnish
Mandarin essential oil, for finishing
Instructions
To prepare the Cordial: Put every components in a pot, heat until it reaches a light boil, agitating so the sugar melts. Then, turn off the burner and leave to reach room temperature fully. Transfer into an sterilised bottle, seal and store in the fridge, where it will keep for around a month.
For the Batch Mix: Mix all the liquids into a big jug, allow it to infuse for one hour, then strain best through a fine cloth, so it's fully clarified.
For serving: Measure 85ml of the premix to a cocktail shaker containing ice, gently stirring lightly for a minute until cold. Pour into a frosted cocktail glass or a similar vessel, top with a few cranberries and finish using a brief mist with the mandarin essence above the glass.
